I know I might be risking my reputation and my chance to ever own a house, but I love avocado toast. It’s so easy, tasty and it keeps me full throughout the morning. Although let’s be honest, I’ve had my fair share of egg and avocado toast for lunch too. Add a small salad on the side, put some garlic on the toast and you’re good. That last one also makes it easy to keep people away from you during this challenging time, so that’s an extra health tip right here. You’re welcome.
How To Make An Egg And Avocado Toast
Can you toast a slice of bread? Okay, do it. You can use a toaster, a non-stick pan with some olive oil in it or an open flame (that last one is kind of a joke, don’t do it, mkay, it’s dangerouns!).
Now, comes the challenging part. Finding avocados that don’t suck. I have a small tutorial on how to ripen avocados faster and safer. I always buy my avocados when they’re hard, because it gives me the opportunity to care for them at home since I don’t have a pet. I do have a 2-year old who takes them out of the bag, calls them “cado” and bangs them on the floor though. It works fine 99% of the time, when I don’t forget to wrap that avocado in paper. Not toilet paper, because it’s a global treasure right now. Normal wrapping paper that you’d use at IKEA to wrap your delicates. And by delicates I don’t mean IKEA underwear, I mean wine glasses and plates. #momlife
However, every now and then I would buy an avocado, get distracted and forget to wrap it in that paper. And sometimes, it turns out, this is not an avocado, it’s a rock that looks like avocado and it never ripens, but its “shell” gets moldy and disgusting. Like this one.

I just threw it away, don’t worry. I am in physical pain, because I hate wasting food, but what can you do.
Okay, so let’s assume you’ve bought your avocado, loved and cared for it for a few days and now it’s ready – creamy, ripe and delicious.
You cut it in half, take out the seed using a knife and scoop out the creamy green part. Make sure to get the parts closest to the peel as I’ve heard great things about them. They have the most vitamins, can make you smarter and more beautiful, you know, the usual. You take that out, put it in a bowl or directly on that toasted bread and add a bit of salt to it. I also love black pepper. And some fresh basil and a small tomato. Another thing I love is garlic. Garlic or scallions. But some people don’t like smelling like garlic in the morning which I will never understand. Although I do kinda get it. When I lived in Germany, some of my coworkers in the office would eat something I think was ground raw meat (it’s called metwurst) on a toast with onions on top. #healthybreakfast You know how sometimes when something really unexpected happens and you look around to find like-minded people who would be as disgusted / shocked that this is happening as you? Nobody. I had never felt so alone and I couldn’t even hold my nose, because people would say I’m not a team player. We’re all in the smell together. Let’s not open any windows.
So now that you have the avocado, spread it evenly with everything that you put on it. And then go ahead and scramble some eggs. I like 1 egg and a about a 1/4 avocado (depends on the size) per slice. Sometimes I’d do 1/2 avocado on a slice. But only when I’m feeling really rich and famous and like I can afford to eat an entire avocado at breakfast.
Top with some red pepper flakes or hot sauce and you’re ready to eat!
Simple Avocado Toast With Egg

This simple avocado toast with egg on top is a super delicious, easy and healthy savory breakfast that you can make in 10 minutes!
Ingredients
- 1/2 avocado, ripe and large
- 1 tbsp chopped basil
- 1/2 tsp red pepper flakes
- 1 cherry tomato, thinly chopped
- 1 clove garlic or 1/2 tbsp scallions, optional
- salt and pepper
- 2 eggs
- 2 slices bread
- olives
- salad
Instructions
- Toast your favorite bread.
- Mash the avocado with a fork and add salt, pepper, basil, the tomato, garlic or scallions (optional). Mix it together.
- Scramble the eggs in a pan, do not overdo it or they would get dry.
- Spread the avocado over the toast. Put the scrambled eggs on top (1 egg per slice) and top with red pepper flakes, black pepper or hot sauce of choice. Serve with some olives or a healthy salad if desired.
