Want to make blueberry oatmeal muffins without any flour? Then this is the muffin recipe you need. It’s the perfect easy healthier meal prep breakfast or snack and it’s kid-friendly too!

I mentioned we baked A LOT using oats at the beginning of the year. By we I mean me and my 6-year-old. So yes, this is one of the baking recipes and yes, even a child can make these flourless blueberry oatmeal muffins and eat them too!
He loves them, his dad loves them and I’m a fan as well. Though I keep them to one a day to keep my blood sugar in check. Unlike regular muffins, these do not cause a huge spike, but are still a baking recipe with dark sugar and I currently prioritize raw foods, as I feel best eating that way.

But, if you want to make some healthier muffins that you can have for breakfast or pack in your child’s lunch box, these are a great choice!

Blueberry Oatmeal Muffins Ingredients
Oats. This will be our flour! I usually use quick or fine oats and grind them in the Nutribullet (nut or coffee grinder will do the job too!). Rolled oats should work too, since we’re grinding them first.
Muscovado or coconut sugar. These types of sugar have a deeper flavor and are less processed than brown or white sugar. Still sugar, but it has some of the minerals. If you like to experiment in the kitchen, you can try the recipe with stevia or other sweeteners too.
Egg. We’ll need a large egg for the recipe to help keep the muffins together.
Milk. I used regular milk and haven’t tried making these dairy-free yet.
Butter or coconut oil and baking powder and vanilla. All a must when making blueberry muffins.
Fresh Blueberries. You need fresh berries, as frozen would make the muffins more soggy.
How To Make Flourless Blueberry Oatmeal Muffins

The first step is to mix the sugar with the melted coconut oil. Do this until the sugar dissolves completely.
Then add in the egg and stir again until combined.

Next, add in the baking powder and the vanilla. Stir in the milk and then the oats, a 1/3 cup at a time.

Fold in the blueberries.
Preheat the oven to 380F/190C.

Grease 6 muffin cups generously with oil or line with parchment paper muffin liners and scoop in the mixture. Bake at 190C/380F for about 15-20 minutes or until the flourless blueberry oatmeal muffins are golden brown.

Let cool off and take the muffins out of the pan after 10-15 minutes. Otherwise, if they stay in the muffin pan, they can get soggy on the bottom. If you didn’t use baking paper muffin liners, release them by running a knife around the edges and gently lifting them.

How To Store & Enjoy
Once they’re cool enough and if you have any leftover, pack in airtight containers and refrigerate.

Like other baking recipes, these will become drier and more dense as they “age” in the fridge. So to bring them back to life and make them taste brand new again, I recommend reheating in the oven for 4-5 minutes.
