These flourless cottage cheese pancakes hold together thanks to oats and eggs, and make the best easy, healthy breakfast idea, perfect for two!

Okay, after this, it’s safe to say over the winter I’ve spent too much time indoors, staring at my phone. This inevitably led to me being convinced I needed to buy cottage cheese. Because I need protein, otherwise in a few years, I will be falling apart like an astronaut. And I never ever want this to happen.
The last thing I want to be is an astronaut.

I do love these cottage cheese pancakes, though. THEY’re SO incredibly good, I’ve been eating them for three days now and I’m now sad I’ve run out of cottage cheese. What am I going to have for breakfast tomorrow? Eggs? I’m running out of those too. Maybe it will be nothing. “I’ll be there for youuuu” (- said fasting).
Cottage Cheese Pancakes
The pancakes are similar to my other oatmeal pancakes, which I usually make with yogurt, just that they are higher in protein. You could do a second egg in there, but I liked them like this, and they held perfectly together. But then again, I am not AS OBSESSED with protein as many people, so 26g might not be enough for some. Add another egg then.

I topped my pancakes with thawed blueberries from the freezer, because fresh are nowhere to be found. And I also added butter and maple syrup. No protein can beat that combo.
Anyway, I hope you enjoy the recipe for breakfast or whenever you have them – dinner is a good time too!

These high-protein cottage cheese pancakes with oats are flourless and absolutely delicious - the best easy healthy breakfast for two! You can even enjoy the pancakes as a dessert option with more protein!
Ingredients
- 220g/8oz cottage cheese (about 1 cup)
- 2 tbsp milk
- 1 tsp vanilla
- 1 egg
- 1/2 tsp baking soda or a pinch
- 1/2 cup and 2 tbsp oats, ground
Instructions
- Using an immersion blender, blend the cottage cheese in a bowl until no lumps.
- Add in the baking soda and mix with a fork - this will help to neutralize the soda. Then add in vanilla, egg and the ground oats, a bit of milk and blend again until smooth.
- Heat a nonstick pan, add 2-3 tbsp of the mixture and spread. Once bubbles start coming up, edges look done and you can get the spatula under the whole pancake - flip.
- Cook on the other side (around 2 mins each side).
- Add butter while still hot and enjoy with maple syrup (or honey) and berries.
