Vegan Cabbage Tofu Stir-Fry
I personally love having a plant-based or vegan dinner at least twice a week, and I am always trying to reduce my dairy and gluten consumption…which btw is pretty tough when your 4-year old thrives on bread and cheese and you’re the one hired to do the cooking. But, I can tell you with such a delicious simple cabbage recipe it’s actually possible…for me, not for my son…And I cannot blame him, I basically grew up on gluten in all of its forms. Now it’s time for something different.
I’ve had this meal three times last week and I really cannot stop. So if you’re trying to eat better and looking for some no-meat gluten-free high-protein recipes, this cabbage stir-fry is for you.
Cabbage Tofu Stir-Fry Ingredients
Cabbage. I used two types of cabbage here – red and green cabbage! Loved the combo for the color, but you can also go for just one. Tastes all the same to me, honestly.
Tofu. I used firm smoked tofu in this recipe, and I’m not an expert on it, but this consistency was perfect for this dish.
More Vegetables. I threw in some mushrooms, we’ve got some garlic in there, onion, ginger and a chopped carrot. You can use whichever vegetables you have, I only recommend keeping the ginger, garlic and onions – they bring so much flavor to this one.
Tamari, crushed pepper flakes, and olive oil bring it all together. You can use toasted sesame oil for an even better flavor, olive oil was all I had, so that’s why I chose it here.
How To Make Cabbage Tofu Stir-Fry
The first thing you need to do is wash your vegetables and chop everything: tofu in slices, cabbage, carrots, mushrooms, onion and ginger. Peel and mince the garlic too!
Heat a nonstick pan, add some oil to it and then saute the mushroom in there for about 2 minutes while stirring. Next, move the mushrooms to the side and add in the sliced tofu. You want to cook it until it becomes golden brown. So, add the tofu, let it cook for about two more minutes, then flip (as much as you can) to get it golden brown on the other side as well and add some crushed red pepper if you want.
Add in the onion, ginger. Then stir in the garlic, cabbage, carrot and finally the tamari sauce. Let cook and stir occasionally for about 5 more minutes.
That’s it, you’re ready to serve this delicious tofu stir-fry!
