Don’t know if you’ll even care but these delicious wholesome chocolate cookies are also gluten-free, dairy-free and actually paleo. Yes, I realize these words describe pretty much the same thing and didn’t exist 30 years ago. Probably. That’s the world we live in.
Also, just one bowl and throwing things into it as if you’re a crazy scientist. A little bit of sodium bicarbonate, some H2O, COH, HOC…Those chemistry classes really paid off.
Healthy Brownie Cookie Ingredients
We’ll basically use many things made out of coconut and almonds here. Here’s the ingredient list:
- blanched almond flour
- cocoa powder
- coconut sugar
- an egg
- coconut oil
- baking soda
- dark chocolate chunks
How To Make Healthy Brownie Cookies
The motto is “Make it uncomplicated”. And basic. It’s the only way I know how to cook or bake or do anything, really.
You’ll start by putting all ingredients into a bowl and then you’ll mix them with a fork.
Line a baking sheet with parchment paper, shape cookies and let them cook for about 10-12 minutes. No more, because you want to keep them rather underbaked than overbaked. You want to keep them fudgy, don’t worry about the egg. It’s a good one. It’s not raw, it’s cooked, so don’t panic and wonder whether you should just give the cookies to the cat and get it over with.
Now you’re done. Take the cookies out, let them cool off, they’ll firm up and you’re going to eat some of them before everyone else finds out there are fresh cookies in the kitchen.
Oh, and you’ll also need to preheat your oven, but I know you guessed it. It’s called telepathy.

Ingredients
- ¼ cup cocoa powder
- ½ tsp baking soda
- ¼ cup chocolate, chopped
- ¼ cup coconut sugar
- 1 egg
- ⅓ cup almond flour
- ¼ cup coconut oil
Instructions
- Preheat your oven to 180C/350F.
- Mix the egg with melted coconut oil and coconut sugar. Add in the cocoa powder, baking soda and almond flour. Then stir in the chocolate chunks.*
- Line a baking sheet with parchment paper, shape the cookies and bake for 10-15 minutes.
- Take out, cool off and enjoy!
Notes
*If you decide to put everything into a bowl and just blend with an immersion blender, you won't go wrong either.
