Got some berries, eggs and oats at home? Then you can make this super easy flourless oatmeal berry cake recipe and make everyone fall in love with you and your talented hands. This cake will make a great healthy snack recipe, a healthier dessert option or even breakfast on the go if you haven’t made anything else for the week.

The healthier cake is made with few ingredients, requires few skills and utensils. But you will need a hand blender. You can probably also use a “real” blender, but I don’t like cleaning it – so I go for the bowl and the immersion machine. I mean, I can’t blame it, I want to immerse myself in this cake as well.

Flourless Oatmeal Berry Cake Ingredients
So here’s what you need to make the berry oatmeal cake without adding any flour:
- Ground oats. With recipes like this pople often ask me why not use oat flour? I have no answer, other than I don’t buy oat flour and I have no idea whether it will work with it. I always have oats around, so I just grind them in the blender or the nut grinder of my food processor. So if you don’t have ground oats – simply blend them a bit in your blender or the nut/coffee grinder – they will turn into coarse flour, which is perfect for a recipe like this one.
- Eggs. We need eggs as the binder in this flourless cake recipe, especially since we won’t be using regular flour.
- Berries. You can use whatever type of berries you like. You can use fresh berries (add as is) or frozen (will need to cook first). I had a pack of mixed berries in my freezer I needed to use up and I did. And honestly I didn’t like them. Because most of them were bitter/tart/sour. So if you’re using frozen berries, go for strawberries, blueberries or raspberries. Keep in mind that you will need to pre-cook the frozen berries, otherwise they will release moisture when baked and make the cake soggy. If you use fresh, you simply need to wash and cut the fruit before adding to the cake.
- Dark Brown Sugar. I love dark brown sugar as it has deeper, richer flavor.
- Butter or coconut oil. These are essential in cookie or cake recipes.
- Yogurt. We need a few tablespoons to make the cake more “creamy”.
- Baking powder and vanilla.
How To Make The Flourless Oatmeal Berry Cake
Now that we’ve got it all, let’s get to work and make this delicious no-flour oatmeal berry cake:

If you’re using frozen berries, before you start with the cake make sure to pre-cook them on the stove. Add to a cooking pot with 1 tsp vanilla and 2 tbsp water, bring to a boil and cook at low for about 5-7 more minutes stirring occasionally. They will thicken up and become almost like a jam.

Blend the eggs with the sugar until smooth using the immersion blender.

Add in the yogurt and the melted butter. You can either blend, or stir with a whisk/fork. I chose the fork.

Then stir in the vanilla, baking powder and the oats.
Preheat oven to 350F/180C.

Pour the cake mixture into a small baking pan lined with parchment paper.

Top the cake with berries.
Bake the cake for 25-30 minutes or until a toothpick comes out clear when you insert it into the middle of the cake.
Wait for the cake to cool off, release the edges with a knife if needed and slice.

How To Store
As always, I usually store leftovers in the fridge. This cake will be good for 5 days, but as with most oatmeal recipes will get more dense as it cools. So, reheat it in the oven for 3-4 minutes when you want to enjoy some.

How To Serve
I like this cake with some yogurt, ice cream will be tasty too. And I can imagine some people will enjoy it with a drizzle of nut butter on top as well. But you know what, plain is also good.
