After a summer full of tomatoes, cucumbers, peppers and all the peaches I could eat, cabbage made it back into my life. I’ve been buying red cabbage, white cabbage (well, I bought two and I’m still eating them!) and making delicious and healthy cabbage recipes like this mince and red cabbage stir-fry and it just makes me so happy.
Growing up I wasn’t the biggest fan of cabbage, it just had that smell to it. But then I grew up and got over my picky eating phase and now I can’t get enough! Cabbage is cheap, super resilient (it stays good in the fridge for many weeks), it’s super healthy and so versatile. I love it in salads – it’s crunchy and so much better than lettuce…but once you saute it…well, sauteed cabbage is simply irresistible.
Today I want to share my easy 15-minute version of a healthy cabbage stir-fry, made with ground beef, Asian-inspired and full of flavor! It’s a great low carb dinner idea and can be made with any type of cabbage you have at home!
What Cabbage To Use For Cabbage Stir-Fry
I used red cabbage, but this stir-fry can be made with white cabbage as well. I’ve tried both of these already within a week – equally delicious! I’m not sure about savoy cabbage, as the leaves are a bit softer and I feel they won’t stay as crunchy when stir fried. Pointed cabbage will work in this recipe too!
Ground Beef and Cabbage Stir-Fry Ingredients
Cabbage. As I mentioned, you could use red or white cabbage for this recipe, the important thing is that your cabbage has firm leaves, so that they can stay crunchy when stir-fried.
Ground Beef. I used lean ground beef, but you can also use another type of minced meat if you don’t want to have beef.
Other Vegetables. Add more vegetables! They’re delicious in stir-fries and add additional flavor. I used carrots and thinly chopped red peppers for sweetness, you could also use jalapeno or chili peppers to make this spicier.
Herbs, Garlic and Onions. These add even more flavor to this cabbage and beef recipe! The herb I used was parsley, but cilantro will work so well in here!
Tamari, Oil and Crushed red pepper. These add salt, spice and fat to the meal and are all really important (well, the crushed red pepper is optional, but I recommend it if you like heat). I used olive oil, but toasted sesame oil will add even more flavor!
How To Make A Healthy Ground Beef and Cabbage-Fry In 15 Minutes
This easy cabbage dinner can be made in 15 minutes with some multitasking. 20 max, if you want to take your time. Cleanup is really easy, as you only need to clean up one pan, a chopping board, a knife and a spatula. Here’s what you need to do:
Step 1: Saute the ground beef with some olive oil and one minced garlic clove for 4-5 minutes, stirring occasionally. While the beef is cooking, you can chop the cabbage in strips, the carrots in strips, peel and mince the garlic, chop the scallions, herbs and peppers thinly.
Step 2: Add in the cabbage, crushed pepper, carrot, the other minced clove of garlic and the scallions. Cover the nonstick pan with the lid for 2-3 minutes to allow the cabbage to cook and the beef to be done completely.
Step 3: Stir in the bell pepper, last clove of garlic and the tamari sauce! Stir for 2-3 more minutes, turn the heat off and then add in the chopped herbs.
Serve immediately and enjoy!

If you don’t want to use beef, you could make this low carb cabbage stir fry with ground turkey or chicken or even boneless, skinless chicken thighs or breast. If you want to make this stir-fry vegan, you can use tofu. In fact, I have a vegetarian version of this cabbage recipe with tofu coming up during the next few weeks.
Vegetables That Go Well With Cabbage
As you can tell from the ingredient list, we used many different types of vegetables for this delicious red cabbage stir-fry. Carrots, peas, broccoli, cauliflower, peppers, onions, garlic all go really well with cabbage. Chopped herbs like cilantro or parsley are tasty too! If you want to go in a different direction, you could even use tomatoes, mushrooms
I like my cabbage a bit spicy, so I always add some chili flakes or crushed red pepper. Paprika, ginger, cumin, even turmeric can taste good with cabbage too, as long as you know what you’re going for. For this Chinese-style cabbage, I recommend some chili flakes or crushed red pepper and the tamari sauce.
How To Meal Prep This Cabbage Recipe
If you like to make your meals ahead for the week, you totally can make this easy stir-fry, you will simply need to make more of it, pack in airtight containers and keep in the fridge.
For me, I usually just prepare the ingredients, so that I can make things for dinner even faster. So, at the beginning of the week, I’d chop up some cabbage, carrots, peppers and peel some garlic. This saves me some time and I can make it in like 10 minutes. It tastes fresh and pretty amazing!

- 3 cups red or green cabbage
- 1 red pepper, chopped thinly
- 2 scallions, thinly chopped
- 3 garlic cloves, minced
- 1 ½ tbsp tamari sauce
- 1 tbsp olive oil
- 3 tbsp chopped parsley or cilantro
- 220g / 8oz ground beef
- 1 carrot, cut in strips
- 2 tsp crushed red pepper
- Add ground beef to a nonstick pan with one garlic clove and some oil of choice. After a minute, stir, breaking the pieces apart. Let the beef saute for about 5-6 minutes at medium-high heat.
- Use the time while the beef is cooking to chop your vegetables - cabbage, carrots, peppers and the parsley (or cilantro) and scallions. Stir in the chopped cabbage, crushed pepper, carrot, another minced clove of garlic and the scallions. Cover for about 2-3 minutes to allow the vegetables to cook.
- Stir in the chopped pepper, the last clove of garlic and the tamari sauce. Add a little bit of oil if needed and stir for 2-3 minutes.
- Turn the heat off and stir in the chopped parsley or cilantro.
- Serve immediately!
