This was a very spontaneous recipe, I did not plan on taking photos or doing anything other than eating it. But we have ground beef and rice pretty much on a weekly basis and I had just bought nori sheets, seriously, the recipe made itself.

I’m not trying to claim these ground beef nori wraps are traditional in any culture, but I am claiming they are delicious and very easy to assemble. I’ve had them with vegetables only, but tofu or fish would be great too! So, take this as is or as inspo for your next lunches! Or dinners.

For the vegetables, chop the lettuce, scallions, fresh herbs (cilantro/parsley or basil) shred the carrot, and cut avocado in strips.

To make the nori wraps you can use a sushi rolling mat, if you find it easier (FIY I didn’t and it worked). Wet your hands with water and place some of the cooked rice on the seaweed sheet. Then using both hands, spread the rice evenly over the nori sheet, leaving some of the sheet empty.

too filled

Some of the sheets I filled almost all the way (too rice-y).

Perfect amount of rice for me!
Perfect amount of rice for me!

Others I left only half filled with rice (I liked those better).

Arrange the fillings over the rice – ground beef, lettuce, carrot, avocado, scallions, fresh herbs (do not overfill).

Tap with wet fingers along the empty end of the nori sheet – this will help seal the wrap.

Now start rolling from the filled side and wrap as well as you can, making sure to keep the filling in as you roll with your fingers.

the nori roll

Once you’ve got the roll, press it down a bit to secure it and to make sure it won’t go anywhere (but in your hands).

You can cut the roll as sushi – I just sealed the bottoms as well as possible with a little moisture and held tight (you can also wrap bottom in parchment paper), cut in the middle and it was a wrap!

Repeat that until you run out of fillings and rice!

To serve I make a simple mix of some tamari and wasabi and dip the wrap whenever needed. Enjoy!

Other Options

You can pretty much change anything about the filling in the recipe. You can use other meat, fish, eggs or even tofu or other vegetables you like. If you have leftovers – you can use them here. Also, use whatever vegetables are in season – cucumbers are for summer, cabbage for winter. A great upgrade would be some toasted sesame seeds over the filling.
