The dream: pizza for breakfast! It’s possible, thanks to this easy oatmeal breakfast pizza bake recipe that is healthy, flourless and naturally high-protein! You’ll need eggs, ham, cheese and some ground oats to make this delicious meal prep and kid-friendly savory breakfast idea. You can even enjoy it on the go and as a snack too!

This little invention, my breakfast pizza bake, came from, well, as always, the infinite source of inspiration – the depths of our fridge.
The best things happen when you dare to go there and decide to use whatever you have. Without fear or disgust. No need to buy anything, just what is left from the week.
A while back, one day, that was eggs, ham, cheese, tomato paste, and even some pesto. I grabbed some oats from the pantry and then magic happened. This oatmeal pizza bake has been a favorite for breakfast, snack or lunch ever since and I’m now finding out it’s high-protein too!
Oatmeal Breakfast Pizza Bake Ingredients
Here are the ingredients you need for this simple pizza bake:
- ground oats
- eggs
- pesto
- tomato paste
- nitrite free ham
- Parmesan and some mozzarella
- fresh dill or basil
- salt and pepper
- optional: jalapenos (or you can use thinly chopped peppers)
We were low on veggies when we made this, but you can definitely add in some thinly chopped arugula, spinach, broccoli or zucchini in there. Just don’t overdo it, because too many can make the bake soggy.
How To Make The Oatmeal Breakfast Pizza Bake
So this breakfast pizza bake is the opposite of revenge, because it’s best served hot. Like most pizza – the fresher the better. But, again, as with regular pizza, you will like it cold as well, especially when you’re on a hike or having a picnic and looking for things to eat out in nature.
Now, if you want to make the recipe for breakfast, you can spend around 30 minutes in the morning making it. Or you can make it ahead the day before and reheat in the oven for 5 minutes at breakfast time. The making part is pretty simple:

- Chop the ham, the jalapenos and whatever vegetables you decide to use (if you do).
- Grate the cheese
- Add everything to a bowl and mix together. Now, if you wish to avoid little messes, start with the eggs and whisk them. Then stir in the tomato paste, salt, pepper and pesto.

- Then add in the ground oats and mix until all are combined. Last, add the ham, cheeses, fresh dill or basil and jalapenos or peppers and if you decided – add some extra vegetables like a handful of spinach or arugula.

- Spread this mixture in a small baking pan, lined with parchment paper. If you wish, you can sprinkle some shredded mozzarella onto the bake.
- Bake at 350F/180C for 20 minutes or until golden brown.
- Let cool off somewhat and cut into slices.
- Enjoy!

More Options
Well, since this is a pizza bake, you can pretty much go crazy with the add-ins here. Think of them as you would for pizza toppings. Make the base with oats, eggs, pesto, tomato paste, salt and pepper.
Then, you can do pepperoni, some zucchini, thinly sliced pitted olives, thinly chopped artichokes, chicken, tuna or even some extra cheese. Basically, use whatever you have and love!
I usually prefer to add about a 1/3 cup of sauteed arugula or spinach and green onions, but my son won’t always eat it if I don’t distract him. So I always just have the greens on the side and cry on the inside. But it’s worth it, because it’s a meal all of us enjoy – which is not always the case!
