High Protein Low Carb Lunch Lettuce Wraps

These lettuce lunch wraps with ham, egg and cheese have become one of my favorite high protein low carb recipes. I’ve made them already 3 times this week and they’re just SO good! And you can meal prep the ingredients as well!

These lettuce wraps with ham, egg and cheese are among my favorite high-protein low-carb lunch recipes. One of the best healthy lunch ideas!

They’re perfect for lunch as they’re filling, but also kinda refreshing and light. Unlike other things I usually have for lunch like I don’t know – a regular sandwich or salad, they did not put me to sleep in the afternoon.

I actually feel perfect after having them and once you learn how to wrap that lettuce, there’s no going back. These lettuce wraps are basically a really good filling salad in wrap form. And I love it, I’ll be making it today as well. Never knew I’d need so much lettuce in my life!

High-protein low-carb lettuce lunch wraps ingredients

High-Protein Low-Carb Lunch Lettuce Wraps Ingredients

  • hard-boiled eggs
  • ham or if you want to make it healthier – boiled shredded meat
  • yogurt garlic sauce
  • mozzarella or cheddar cheese
  • avocado
  • fresh herbs like dill, oregano, basil or parsley
  • radishes
  • scallions
  • lettuce (used green leaf, but any type of large-leaf lettuce will work, you can also do boats if you wish)
  • salt and black pepper
  • coleslaw

How To Make The High-Protein Low-Carb Lunch Lettuce Wraps Wraps

You can meal prep many of the ingredients – the slaw, yogurt garlic sauce and the hard-boiled eggs.

Wash the lettuce leaves one at a time and pat-dry them with some paper towel. Then thinly chop the scallions, radishes and the fresh herbs (basil, oregano, dill..). Slice the ham in half-circles, chop the eggs and shred or chop the cheese you chose.

Arrange the lettuce leaves over a sheet of parchment paper, so that the ends overlap. Since the green lettuce leaves are like triangles, I placed them in opposite directions to make the wrap more sturdy.

Now place the ingredients for the filling on top of each other, in the middle of the lettuce pathway that you paved.

Roll the wraps tightly

Start rolling the first lettuce leaf (be firm with it!) while grabbing onto the next one with your fingers, holding and rolling tightly until you wrap it all the way. Try to do it as confidently as you can, you cannot be too gentle while rolling this one.

Now that you’ve rolled the wrap, hold it tight and place it in the middle of the parchment paper, then wrap the paper around the lettuce wrap.

Twist the loose ends of the parchment paper as if to wrap a candy.

Now, slice in the middle and enjoy!

If you don’t want to go through all of the rolling, you can also just arrange the ingredients over 1-2 lettuce leaves and have them like tacos or boats.
