Today we’re going to learn how to make oatmeal cookies from scratch with this easy and healthy flourless oatmeal cookie recipe! That’s right, no flour! We’ll use gluten free oats, coconut sugar, an egg, coconut oil, a tiny bit of baking soda and some chocolate chips or chopped chocolate to make these healthy oatmeal cookies happen.
Soft and chewy, these are seriously the best homemade oat cookies and are a great healthy snack for kids and grown-ups!
If there’s one thing I’ve never, ever made until 2020, when life forced us all to get out of our comfort zones and stay indoors, like, all of the time – it’s cookies. Who cares about cookies, amIright? Why would you eat cookies, when you can have a cake. Go big or go home. And in that case we were all already at home, so you cannot go that big. You’ve got to try the small things in life. Like cookies.
Turns out, my little angel, my pride and joy, my little son. He loves cookies. He especially loves them when they’re covered in chocolate, so that they can melt in his adorable hands, which he always without a fail, decides to clean using whatever I’m wearing. Pants or sweater, or in rare cases: a beautiful dress. Who am I kidding, the last time I wore a dress was when I was a 3-year-old myself and looked like a princess. I remember it like it was yesterday.
Okay, oatmeal cookies, I gotta focus guys, it’s not an easy task here. “Oh, you’re doing a brain surgery at two? Mkay, go play with your toy scalpels and stethoscopes and let us grown-ups write the recipe here, okay.”.
My son, not only loves eating cookies, he also is really good at making them. And our healthy cookies are so much better than the store-bought ones. Also, no chocolate handprints on my clothes. I almost feel like a minimalist.
We made a ton of cookie batches last December. Some good, some bad, some edible, all eaten already. We always use gluten-free oats or almond flour, because we never have regular flour at home. It’s not a thing here.
But we do use butter. Or coconut oil. And dark brown or coconut sugar. So these oat cookies aren’t the healthiest thing, but they’re so much healthier than “regular” cookies.
As for taste…These oatmeal cookies are THE BEST thing ever. Melt in your mouth. They’re soft on the inside, chewy and crumbly on the outside, with just the right sweetness. Uhhh. I mean A-DDICTION!
Six Simple Oatmeal Cookie Ingredients
This flourless oatmeal cookie recipe requires just six ingredients:
- Oats. You can use used quick or rolled oats instead of the flour here. I always use quick oats, but rolled will work too since we’re blending everything together.
- Chocolate chips or chopped dark chocolate (if you like me forget to buy the choc chips)
- Coconut sugar or dark brown sugar to add sweetness
- Coconut oil or butter will work too
- Baking soda
How To Make Oatmeal Cookies
Okay, here’s how to make the oat cookies, so that you can impress anyone and everyone. It’s seriously so easy. No separating wet from dry ingredients and whisking for hours, we keep it simple here.
Put all ingredients in a bowl and blend with an immersion blender. If you don’t have an immersion blender, but a food processor – you can use that.
Side note for parents: If you have a child who you want to involve in the cooking process, you can prepare the ingredients and let your child put everything into the bowl. This way they feel like they’re making the recipe, my son really enjoys it. I crack the egg, and he adds everything else and stirs a bit with a fork before we blend it.
Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
Take a spoonful of cookie dough and shape cookies with your hands. The dough can be a bit sticky, but oiling or wetting your hands really helps with this process.
The cookies will get a bit bigger and fluffier, but won’t change shape too much. So keep that in mind while making them.
Put the oatmeal cookies in the oven and bake for 12-15 minutes at 180C/350F, but not much longer.
After baking, take them out and let cool off for about 15-20 minutes. They’ll firm up and get a bit crunchier once they cool down.
Last, but not least: eat them!
Are Oatmeal Cookies Healthy?
These oatmeal cookies are for sure much healthier than the ones we were buying. Store bought cookies are made with white flour, white sugar and lab knows what.
In this flourless oat cookie recipe we used less processed, healthier foods. The cookies are whole grain and naturally gluten free and dairy free.
Also, since I have insulin resistance, I’m checking my blood sugar more often than most people, because I’m trying to keep it stable. After having two of these oatmeal cookies I didn’t notice any unhealthy spike.
If you want to make cookies that have even less sugar, you can use a sugar-free sweetener like stevia. I feel like these would be a great option for a healthy snack or even breakfast.
How Many Calories Per Oatmeal Cookie?
One oatmeal cookie has 148 kcal. In my opinion, a perfect serving is made out of two cookies, especially if you’re having them for snacks.
What Else Can I Add To Oatmeal Cookies
A great option that I’d love to try out is adding some chopped nuts to the batter. You can try some walnuts, pecans, almonds. I only left these out because my son isn’t old enough to eat nuts yet (they’re a choking hazard for small children).
You can also make these healthy cookies even more nutritious and rich in fiber, by adding ground flax or chia seeds, although I haven’t tried this one yet.
Another option would be to leave out the chocolate and add some raisins, dried blueberries or cranberries and turn these into breakfast cookies. In that case, I would first blend the batter and then add in the dried fruit.
Seriously, if you want to make someone fall in love with you, make them these oatmeal cookies. Yes, I often make them for myself, thank you very much. Does it make me a narcissist? Or is it called self-love? Anyway, I hope you enjoy them too!

- 1 cup oats
- 1 egg
- ¼ cup choc chips*
- ¼ cup coconut sugar or dark brown sugar
- ⅓ cup coconut oil
- ½ tsp baking soda
- Blend all ingredients with an immersion blender or in a food processor.
- Preheat the oven to 180C/350F and line a baking sheet with parchment paper. Start shaping the cookies with your hands. I used about a heaping spoon of batter for one cookie. The cookies will expand a bit during baking, but the shape won’t change much, so keep that in mind.
- Bake at 180C/350F, for about 10-15 minutes and do not overbake.
- Let them cool off for about 20 minutes and enjoy!
