Meatballs And Vegetables Soup Ingredients

Ground meat. I used lean ground beef, turkey or chicken should work as well.

Vegetables. The usual soup vegetable suspects – potatoes, onion and carrot are here, but we also have some surprise guests like a little bit of red chili pepper, garlic, tomato and fresh basil that makes it really good.

Herbs, Olive oil, Salt and Pepper. Add some dried herbs like oregano and mint as well as salt and lots of black pepper to make a tasty broth.

Lemon juice and egg yolk. This combo will make the healthy meatball soup a bit creamier without using actual cream.

Water or Stock. Or you can do both. I never have stock, so I usually go for water. Here it’s important to add a good amount of salt, so that the soup doesn’t turn out bland.

How To Make Meatballs And Vegetables Soup

mix the ingredients

The first step here is to make the meatballs for the soup recipe. In this case, we’re using some grated potatoes, meat, black pepper, mint, a little bit of cumin and salt.

mix the ingredients

Mix those together and shape meatballs.

Thinly chop an onion, carrot, the rest of the potatoes, red chili pepper (optional), tomato (or grate it) and basil. Mince the garlic.

add all ingredients

Add the meatballs, potatoes, carrot, onion, chili pepper, tomato and garlic to a cooking pot.

add the water

Cover with water (about 4 cups), then bring to a boil. This can take a while, but once boiling, reduce the heat and simmer the soup for 30 minutes.

In the last minutes, have a taste and add salt and pepper as needed. Then add the basil to the soup.

Last thing – add the egg yolk to a bowl and mix it with lemon juice or if you want – vinegar. Ladle some of the broth from the soup into this bowl and mix. Repeat a few times (3-4 ladles) until the soup temperature evens out with the temperature of this mixture. Then add the mixture to the soup and turn the heat off.

Serve immediately and enjoy!
