This is one of those meals I could eat for breakfast, lunch or dinner. Or whenever I’m bored or have a lot of computer work to do, this quick quesadilla is my best friend. That I eat.

Eggs. Like most people, I love eggs for breakfast – they’re filling and really fast and easy to cook. You need two and you need them scrambled.
Tortilla. Any type of flour tortilla would be good here – gluten-free, keto, whole grain – they will all do.
Vegetables. The usual suspects – tomatoes, basil and if you’re in the mood for it – add in some spinach or arugula.
Cheese. Opt for the cheese you’re in the mood for when making this simple recipe. I went for mozzarella, but feta or Parmesan cheese could add a nice flavor as well.

There’s probably nothing Mediterranean about most quesadillas, but let’s just go with it, because I used basil and mozzarella here. And this one does taste like a Mediterranean diet breakfast!
So, in order to make a basic breakfast quesadilla you need 3 things: a tortilla, some scrambled eggs and cheese.
To make that breakfast quesadilla Mediterranean, you slap a few leaves of basil, tomato slices and mozzarella on it…Or, if you wanna go to Greece – add some olives and feta cheese. You can even scramble them with the eggs.
Once you’ve gotten over that decision fatigue and filled your tortilla with everything you have in your fridge, fold that tortilla in half and toast it on both sides in a pan.
Slice and inhale as soon as possible.
