….
I was going to make them into shortbread cookies, but decided I’m not in the mood to actually bake them and to wash the baking tray after.
“You know what, there’s no egg in these. Salmonella can’t touch me. Not today. Me and MC Hammer are like that. Oh, yeah, today I’m on top of the world.”
Usually, these monologues spiral upwards real fast.

Just like these cookie dough bites. I didn’t know what type of photo would make them look as tasty as they are, so I tried different arrangements.

With coffee – the way I just had them…

In rows like soldiers ready to go to Antarctica, aka the fridge.

Or, my favorite – being cheerleaders and doing acrobatics.
I don’t know which one turns out best. Usually, I just eat them and don’t judge cookie dough by its cover.
You can also put chocolate chunks in them, they’re a great companion to coffee and might be used as a snack. But more on the dessert side.

I actually even tried to turn this into a cookie dough frozen yogurt thing, because I was sick of buying ice cream that’s not only expensive, but also full of chemicals, but it didn’t really work. I’ll keep the oatmeal cookie dough bites though.
Here’s the recipe, hope you like it.

Oatmeal Cookie Dough Bites
These oatmeal cookie dough bites are a great meal prep sweet snack or dessert. They're great with coffee or tea, very customizable and tasty.
Ingredients
- 2/3 cup oats
- 1/2 cup walnuts or pecans if you prefer
- 1 tbsp coconut oil or butter, melted
- 2 1/2 tbsp maple syrup /or add to taste
- 1/2 tsp cinnamon
- 1 tsp vanilla
- Pinch of salt
- 1 tbsp water
Instructions
- Blend oats and walnuts to make flour - I used the smaller cup of the Nutribullet for this.
- In a bowl, mix the melted coconut oil (or butter) with honey, vanilla and cinnamon. Then add a pinch of salt and the oats and walnut flour, mixing well. Add a tbsp water to make the dough a bit softer, but not wet. After you mix - taste test and add honey, pinch of salt or even chocolate chunks if you want to.
- Grab a spoonful of the dough and shape bite-sized balls with your hands. After you've made a few, If you wish add a tsp of peanut butter to the rest of the dough to make peanut butter bites (I did half with and half without).
- Enjoy and store leftovers in the fridge for up to 5 days.
Notes
The good news is - we're not baking these, so if you need to add a little bit of something - like extra honey or oats or even peanut butter - you can do so even after mixing. Just taste the dough before you shape the bites and adjust to your liking!
