I know they don’t look like a 90’s supermodel, but these savory oatmeal quiche pancakes are super good. If you’re into more nutritious savory breakfast or brunch ideas with eggs and ham, bacon or salami you’ll love this flourless savory pancake recipe. And if you’ve got a tiny picky eater at home, you should know these are a kid-friendly, kid-approved easy breakfast recipe, created by a 5-year old aka my son Aiden.
“I’m going to make a recipe right now”.
These are the words that send chills down my spine because I know the mess will be ginormous. All I want after dinner is to hibernate for 1-2 hours in front of the TV. Can we just watch a romantic comedy with 3rd class actors on Netflix, that I won’t remember 2 days from now, please? Or at least some cartoon about puppy superheroes or ladybugs?
A recipe it is, then.
Whether it’s a cold soup made with very roughly chopped green peppers, water, olive oil and no salt for his diado (grandpa)…Chocolate muffins without oats, an egg, flour or sweetener…Or actually yummy flourless cookies, my 5-year-old can always whip up something to eat.
And wonderfully, in many cases, with a little bit of help, his recipes are actually super tasty. Like these savory oatmeal quiche pancakes. We made them for what regular people would call “brunch” on a Saturday and we loved them! They’re pretty much like mini omelets, but we like to call them pancakes, mkay?
What’s In These Savory Pancakes?
Eggs are the main ingredient in this delicious savory brunch recipe! We love eggs for breakfast, as they’re filling and super satisfying.
Salami or Ham. Or bacon. We had some salami at home, because we were making pizza the other night, so that’s what we used. I recommend going for a healthier, preservative-free version of these ingredients.
Oats. We used a few tablespoons of oats to thicken the batter and to make the pancakes. I love adding oats to meals as they’re a good source of fiber and have some antioxidants in them.
Mascarpone or cream cheese. Again, something we had already on hand – you only need a tbsp of these to get that creamy quiche-like consistency. If you don’t have either, a little bit of milk or cream could do the job too.
Mozzarella. Or another type of cheese you have could work here. I wouldn’t use feta, as it’s on the saltier side and could overpower the ham or salami.
How To Make These Savory Oatmeal Quiche Pancakes
As I told you, this is a brunch recipe that my 5-year old made, so it should be clear to you how easy it is to put these savory oatmeal pancakes together. Here’s what you need to do:
- Add the eggs, oats, cream cheese or mascarpone into a blender and blend until smooth. We used the immersion blender and a bowl to do the blending.
- Then, chop the salami super thinly and shred some cheese. Add these to the egg mixture.
- Finally, heat a nonstick pan, grease with olive oil or whatever oil you like and make the pancakes. These pancakes are on the smaller side.
- Once the edges look done, flip and cook until golden brown.
- Transfer to a plate and enjoy!

Healthier Or Not, We Love These Pancakes
Are these savory pancakes healthier? Well, there’s oats in them. So there’s that – we all know oats are the fountain of youth and longevity. Then eggs are also good for you in moderation…and the salami, well, we got one without preservatives and I really do hope it’s better.
If that’s not healthy enough for you, you can of course make the savory pancakes way healthier by sauteeing a cup of kale or spinach before and mixing it into the egg mixture. You might also decide to add some thinly chopped scallions, peppers, or broccoli – use whatever you have. Whatever you do, make sure to first sautee the vegetables and then mix with the eggs. Quite like what I did with these savory spinach and feta muffins. Can’t promise the kids will love this variation though.
We had the pancakes together with a green smoothie on the side, so I feel we did pretty well here. My kid had eggs, cheese, oats, spinach, banana, apple and a little bit of salami for brunch I’m calling that a win.
