Have you ever made cauliflower rice before? It’s super easy: you basically put some cauliflower in a food processor and pulse until it’s chopped so small that is looks like rice. The one thing I won’t recommend is to pulse for too long – you don’t want to shred that cauliflower too small. If you find a floret won’t pulse all the way through – take out the rice and pulse that floret alone again.
If you don’t have a food processor, but time, a lot of patience and good grating skills, another option would be to use a grater – works just as well! Or with even more skills and patience – chop chop chop into tiny pieces.
Once you’re done with the chopping you’re ready to make your own delicious cauliflower rice in a pan.

And the recipe is super old, a senior…I made it like in August – I’m really behind with my content, mkay, detective…we know it.

- cauliflower rice
- olive oil
- crushed red pepper
- smoked paprika
- carrot
- garlic
- chopped greens (arugula, basil and parsley)
- pickled jalapenos
- cream cheese
- shredded mozzarella
- don’t forget about salt and pepper
How To Make Spicy And Cheesy Cauliflower Rice: Step By Step
Step 1: Make your cauliflower rice in your food processor or using a grater. To do this, separate the cauliflower in florets and pulse until it resembles rice. Don’t pulse too much, you don’t want the cauliflower to get too small – it will get mushy as it cooks.
Also, chop your vegetables.
Step 2: Saute the cauliflower rice with some salt, crushed red pepper, paprika and olive oil in a nonstick pan at medium-high for 3 minutes. Cover with a lid.
Step 3: Add some garlic, the carrot and greens while stirring consistently.
Step 4: Cover with a lid and let cook for 3-4 minutes.
Step 5. Add in some more garlic, the jalapeno and cream cheese. Stir again.
Step 6: Finally, stir in the mozzarella and turn the heat off.
Serve immediately.

- 5 garlic cloves

- 1 tbsp cream cheese
- ½ cup mozzarella, grated
