I don’t know who needs to use up some peaches, but even if you don’t have any at home right now, you should go and get some. Because this flourless, healthy peach crumble pie with oat crust is pretty amazing. Like I made it yesterday, thinking it would last me for three days and that I will share it with others. No and no. I have only half of the oatmeal peach pie in the fridge right now and I’m lying a bit. Because it’s only a quarter.

So what if I had it for breakfast and dinner yesterday? And for dessert? I had a big salad for lunch. I paid my dues and committed no crimes. And bad mistakes I’ve made a feww….but this oatmeal peach pie isn’t one of them. I’m such a good lyricist.
Anyway, if you need a good healthy peach recipe that you can have for dessert or with your coffee/tea for breakfast, this is the one. It’s only wholesome ingredients like oats, walnuts, peaches, some maple syrup and butter. You can use coconut oil, too if you want to make it dairy-free/vegan. For gluten-free, use gf oats. (Who knew girlfriend oats are gluten-free?)
This recipe makes a small batch – like 4-6 pieces, so make sure to double for a “normal”-sized batch. I like that it’s pretty easy to execute. If I can do it, you can do it. You’ve got this. I’m cheering you on. I know many people say this and it means nothing anymore, but in this case it’s true, look:

Peach Crumble Pie With Oat Crust
This flourless peach crumble pie with oat crust is the best way to use peaches! Made with wholesome ingredients, you don't need advanced baking skills to make it. Enjoy healthy oatmeal peach pie as is or with some ice cream / yogurt for dessert or even breakfast! This is a small batch recipe, so make sure to double the ingredients for a normal-sized batch.
Ingredients
Crust and topping:
- 1 1/2 + 2 tbsp oats
- 1/2 cup walnuts
- 3 tbsp / 40g butter or coconut oil
- 1 tsp cinnamon
- 2 1/2 tbsp maple syrup
- 1 tbsp water
Filling:
- 1 1/2 sweet medium-sized peaches
Instructions
- Add oats, walnuts and cinnamon to a blender or a nut grinder and turn them into, what will be - your flour.
- Melt butter and mix it with the maple syrup.
- Add the flour to the melted butter and syrup and mix to create a crumbly dough. Add a tbsp of water and mix again.
- Preheat the oven to 180C/350F.
- Line a baking pan with parchment paper.*
- Then add 2/3 of the dough to the pan and spread it to make the pie crust, pressing down to shape. You can do this with a fork and then to really press down, use your hands. We're reserving the rest of the dough for the topping.
- Next, wash and cut the peaches and arrange them on top of the crust.**
- Once you've arranged the peaches, top with a layer of crumble. Grab some of the dough, squeeze between your fingers to shape chunks and arrange to cover the peaches. As well as possible, it's okay if there are some "bald" spots.
- Bake for 20-25 minutes until the crumble looks golden brown. (Mine needed 25, but ovens are different).
- Let cool off and once cool cut into pieces. The pie is very crumbly, so you want to do this with some care. I found that refrigerating helped me cut a bit better.
- Serve as is or with ice cream/yogurt and store leftovers in the fridge for up to 3 days. I actually like this pie more after it spends some time in the fridge. I hope you enjoy it as well!

*I used a small pan (6 inches or 16 cm), because I usually get sick of eating the same thing very fast and I bake in small batches. (not this time, I'm baking again today!)
**If you like, you can saute the peaches first or add some vanilla or cinnamon to them. I didn't do that. The peaches I had were super sweet, so I didn't need to do anything other than cut them and then play some puzzle with the pieces.
